Go-to Veggie Pasta Recipe

Lately I’ve felt the need to share recipes that are simple. Life is rough with sick ones and little sleep, so the less work, the better.  This veggie pasta recipe I made tonight was a huge hit, especially with the little ones, and took me about 20-25 minutes to put together. FTW!

veggiepastaRecipe: Go-to Veggie Pasta

Summary: Simple, delicious veggie pasta meal that takes very little time to prepare, great for busy moms and dads on a weeknight. This also makes great lunch leftovers, hot or cold.

Ingredients

  • 2 cups chopped vegetables (we used orange peppers, green beans, and broccoli – most crunchy veggies will work)
  • 1 Tablespoon of olive oil
  • 3-4 ounces of stock
  • 1 Tablespoon of butter
  • Salt
  • Fresh ground black pepper
  • Garlic powder
  • Parsley
  • 1 cup chopped meat (pork, chicken, seafood will all work – we used leftover pork chops)
  • 1 cup cooked pasta (rotini, penne, any small pasta will work, be sure to chop your veggies while pasta is cooking – big time saver!)

Instructions

  1. Set your pan to medium heat, add olive oil and let it warm up
  2. Toss veggies in and season with salt, pepper, garlic powder and parsley
  3. Saute veggies for 3-4 minutes depending on how crunchy you like them
  4. Add in stock and butter and wait for butter to melt
  5. Add in cooked meat and pasta and toss to warm, about 3 more minutes
  6. Serve!
