My kids and I tried this awesome smoothie recipe (from simplegreensmoothies.com) the other day, just because I’ve always been curious about bok choy. I was flabbergasted at how much my kids ate, I had to make a second batch for myself. It has a really interesting earthy flavor, and no I don’t mean that it tasted like dirt. Try it, you’ll see, and then comment on here and tell people how much you love it. Just kidding, only if you want to. Anyway, I love the idea of getting more vitamins and nutrients in our daily routine via a smoothie. I got a cup of bok choy, a cup of peaches, and a half of a cup of strawberries in one sitting. Summary: Quick, simple healthy smoothie for breakfast or snack
- 1 cup bok choy, fresh
- 1 cup whole milk
- 1/2 cup frozen strawberries
- 1 cup frozen peaches
- Splash lemon juice
- Shake of turmeric
- 1/2 Tablespoon of honey
- Blend bok choy and milk in blender until smooth.
- Add the remaining fruits and blend again.
- Add lemon juice, turmeric and honey, blend again.
