Sugar snap peas add some delicious SNAP! to veggie pasta

We visited a new local farm this weekend. I pass this farm at least twice a week, some weeks daily, and we finally found the time to stop in on Sunday. I purchased a ton of yummy looking vegetables – sweet potatoes, summer squash, zucchini, tomatoes, peas, and something we haven’t had in ages, sugar snap peas! I rinsed them off today and sat down at the table to prepare them while the girls had their afternoon snack. I like to prepare veggies and fruits in front of the kids so hopefully they’ll learn how to prepare them by watching.

I had to look up how to prepare them, basically you pull the stem down the pea pod, which removes the string.┬áIt wasn’t long before both of my kids were stringing the peas and then gobbling them down before I could save them for dinner. It was really cute and amazing how much they devoured before I could get to them. I used them in a pasta dish tonight, similar to my Veggie Pasta Go-To Meal, but instead of peppers and broccoli, I used sugar snap peas, peas, and tomatoes. Lord have mercy, it was delicious sprinkled with grated parmesan cheese. Go to your local farm or farmer’s market and get some sugar snap peas right now, do not hesitate, they are so delicious and in season!

    This reminds me of one of my childhood friends. She used to bring a ziploc bag of frozen sugar snap peas to school with her for a snack. They were the best.
